Like you, we have been adapting to the changes of daily life prompted by the spread of the Coronavirus (COVID-19). This page provides an overview of what we’re doing to maintain the safety of our customers, employees and partners.

Here are some important updates as of March 24, 2020:

  • Customer service. Many of our team members have been set up to work from home, helping support the efforts to stem the spread of the virus.  We are maintaining customer service hours from 8:30a.m. to 3:30p.m. PST, Monday through Friday. You may experience slightly longer delays than usual, but we will attend to every enquiry as soon as possible. 
  • E-commerce.  Due to many retail closures, we have have launched a new e-commerce website, allowing customers to order products directly from our warehouses.  These warehouses are large, and as an additional safeguard our warehouse staff members are adhering to social distancing and hand washing practices established by local health authorities. 
  • Communication:  We have added an online chat feature within our website for customers looking for assistance and/or technical support.  We have also established a Facebook Messenger chat, which can be utilized via our Bradley Smoker Facebook page. These services will be monitored and maintained by internal and external customer service and technical support staff. Our 1-800 number has been automated, with options established to direct your calls to the most appropriate departments. 
  • Safe product delivery. We have installed measures to ensure that products ordered online are delivered safely to your home. For most customers, this allows you to retrieve your items without having to interact with anyone directly. According to experts at the World Health Organization and Centers for Disease Control, the risk of infection from a package is “incredibly low”, and we are taking additional measures to ensure that our products are clean and handled with extreme care. 
  • Staff members. We have established a working system that allows our team members to take your calls or answer emails and chats from home, helping contribute to our community’s efforts to stem the spread of the virus. While they may have limited ability to handle warranty and parts requests we will be attending to all requests as quickly as we are able.  

While we’re adjusting to these disruptions, we continue to be dedicated to serving our customers with minimal interruption. We will be posting updates to this page as things develop and deeply thank you for your support and patience.

Greetings all!

Being my first blog for Bradley, I had planned to put together an epic recipe or some form of “how to” which would make life in the kitchen easier. However, sometimes the universe has different plans for us.

So instead, for my first blog I’m going to talk about my Mom. Not in the specific sense, although she was a fascinating woman and I’m not certain others would share my enthusiasm on the topic. But on how she indirectly made me realize something last night that I hadn’t really considered previously: Sometimes it’s bigger than the food.

A Passion for Cooking

We lost my mom back in 2004, long before she had ample time to teach me ‘everything she knew about cooking. But beyond the techniques and recipes I did manage to learn, she taught me about passion.

She demonstrated how food can be a personal expression, send a message, or simply allow you to give a piece of yourself to those you are cooking. Likewise an artist would express him/herself on canvas, we who love to cook do it through food.

I recall a conversation I had with her (in the kitchen of course) during the preparation of some holiday meal in the past. It began with an offhand comment something like “Why can’t I get my potatoes to taste like yours?”

One Secret Ingredient

She looked at me with a mischievous glint in her eye and replied “Because you are just making them for you and aren’t using my secret ingredient.”

Puzzled, I looked at her and said “I make them exactly the same way you do! What secret ingredient’ are you talking about?”. She returned to her gaze to whatever task was in front of her on the counter, and with a small smile she gave a one word reply; “Love”.

OK, OK, enough walking down memory lane.You may be wondering how any of this ties into the blog. What happened last night that led to my scrapping of the blog I’d written, and putting this one in its’ stead.

That’s where the Universe comes in

My wife Chantelle and I were unpacking our final Christmas decorations, while our girls were running around the house being kids. They were all excited rediscovering all of the forgotten treasures not seen since last year. Then, Chantelle looked at me and, after a heavy pause, said: “I wish we could make a Christmas dinner exactly like the ones your mom used to make for our girls” .

I briefly flashed back to those multi-course, extravagant, “wear your stretchy pants” celebrations of all things edible that mom would put together. So, I replied: “We can!”

A Treasure of Old Cookbooks and Handwritten Recipes

You see, I had all of my mom’s cookbooks tucked away. Not only the ‘Better Living’ or ‘Women’s Day’ genre books, but also the “Good enough to cut out” and “Important enough to be hand written” stacks of homemade notebooks.

Still in the box in which they’d rested all those years since we’d cleaned out her house! To be honest, I’d never used them. Maybe because I’d never needed them, as the internet makes finding recipes all too easy. Or because I thought they may make me melancholy.

Nevertheless, with a mission of a “mom’s Christmas dinner” on the roster, out came the books. In those books I found not only the recipes for onion-sage dressing and Parmesan green beans I was looking for, but I also saw the evidence of Mom’s ‘secret ingredient’ all through those books.

Sometimes, it’s Really More than Just Food

Hand written notes, additions and modifications were throughout, and I found myself thumbing through pages and pages. Pieces of her that made each of those dishes what they were.

That’s when it dawned on me! We all take pride in serving the best we can to our friends and loved ones. However, what I didn’t realize is that when we put our passion, our attention to detail, and our own ‘secret ingredient’ on those plates, we are providing more than food for the body.

Sometimes, it’s bigger than just the food. It’s a way of taking care of our loved ones, a way of showing that they are so important to us that we want to give them our best. Sometimes it’s just a simple “I love you”.

The Universe Part 2

Thirteen days before Christmas, and I was again looking through those books to take a photograph for this blog.

Among the dozens of newspaper-clipped recipes, there was apparently something that I’d missed. When I opened the cover of one book, there was a single loose piece of newsprint.

Thinking it was another recipe, I flipped it over to read it. It wasn’t another recipe, but an old clipping by an unknown author, from some unknown paper. However, the fact that my mom had saved it in her cookbook tells me that I missed another way that it’s bigger than the food: the time we share in the kitchen.

You know,I think I’ll cook with my girls tonight. Little do they know that unbeknownst to them, regardless of what they learn, I’ll be taking far more from it than they will.

Can you tell us something about yourself/family/living situation?

I was a pastor for 15 years and a couple years ago we decided to make a change. My wife went back to teaching and I started the food blog and recipe development full time.

We live in Toronto and have 3 kids. We live a happy life, filled with hockey, football, dance classes, piano and drum lessons. In between those, we strive to sit around the table for some meaningful family time, while we eat some tasty food, that was probably smoked!

The Most Embarrassing Food/Cook Story

Wow – I have a few! There was one time that we had a bunch of people over for dinner and I was grilling some ribs (before I owned a Bradley!). I set them up on the side of the grill for indirect grilling, or so I thought I had. When I went back, the ribs were completely charred and totally inedible. The meal quickly turned into a vegetarian dinner.

So you have this great blog. Tell us how and why you started this

I have loved to cook for years and I always enjoy creating new recipes. There were friends and family members who asked for my recipes, so I decided to start a blog and post up the recipes.

It was just a hobby back then and the photos of the food were atrocious. Ha ha. But, over time, I fell in love with blogging about food and sharing my creations with the readers. It has been great to see it develop and the readership grow. Besides, I love developing partnerships with companies like Bradley Smokers.

The Goal for the Blog

I remembered when I first got into smoking, I spent a lot of time looking all over the web for tips, spice rub and marinade recipes, smoking temperatures, times and more. There is a lot of information out there and sometimes it can even seem overwhelming for people new to smoking.

A Resource Centre to Provide Information for the New Smoker

I want this blog to be a resource centre providing lots of information for the new smoker. Along with that, there are many veteran smokers out there who have lots of experience and I hope that this blog is relevant for them as well. Modernist cooking is changing the way we prepare food and even smoking is evolving. I want to explore how we can integrate smoking into foods that we might not traditionally think to smoke. It should be fun!

A Passion for Food 

When I was young, my family went on vacation to New Orleans and Biloxi. On that trip I had so many new food experiences, things like oysters, crawfish, gumbo, jambalaya and other Cajun/Creole dishes.

I remember once we were home, there were times that my dad would be in the kitchen, cooking some of those dishes I ate on the trip. I never cared much before, but after our vacation, I found myself looking over his shoulder more frequently learning how to make some of those memorable dishes.

A Special Passion for Food Smoking

I think that it is the combination of the flavours and the tenderness of the meat. Smoking imparts a wonderful flavour into the meat that is complemented with spice rubs and various BBQ sauces. Along with the flavour, smoking is often done at low temperatures and over a long period of time, which results in tender, fall off the bone meat. I also love how smoke can add a new flavour profile to a dish. I remember the first time I smoked some tomatoes to make creamy tomato soup – the smoke flavour totally transformed that soup. It was so delicious!

The Favorite Thing to Smoke

Pork! That is probably broader than you were asking, but it is hard for me to narrow it down more than that. I love to smoke pretty much anything pork including ribs, pork butt (pulled pork – oh yeah!), tenderloin and even ground pork for some tasty smoked fatties. A close second is salmon. Jalapeno poppers are great as well. Oh, yeah, chicken wings too. Okay, I think I should stop now.

Why Bradley Smokers

I love the Bradley Smoker for their ease of use. They truly have a ‘set it and ‘forget it’ functionality which is outstanding for low and slow cooking.

I smoke lots of pork butts and brisket that require hours and hours of smoking. It is amazing that, with the Bradley, I can set the temperature, fill the smoker tower with lots of wood bisquettes and they advance automatically. I do this all the time for long overnight smoking. I can go to sleep with total assurance that the Bradley Smoker is working away, keeping the temperature steady and smoke flowing. On top of the ease of use, I am really impressed that the Bradley Smoker is able to produce consistently great results each time, from everything including meat, fish, cheese, nuts and more!
