Grilling gives a unique smoky flavor to meat, fish, and poultry. The process is also simple as it requires less attention as compared to cooking on the stove. However, grilling has some downsides too. Here we are going to discuss the drawbacks of grilling and the ways to avoid them.

Here is what science says about the downsides of grilling

PAH: While grilling the fat from the meat drips on the charcoal and forms polycyclic aromatic hydrocarbons (PAH). Research indicates that PAH is a toxic chemical that is considered a carcinogen. It may lead to colorectal cancers.

HCA: When the meat is grilled, it forms a charred outer layer that contains heterocyclic amines (HCA). If the meat is cooked to complete doneness then the inner part can also contain HCA. Heterocyclic amine is listed as a carcinogen and is believed to cause pancreatic cancer. This is why people who prefer their steak slightly raw or medium done are less prone to cancer than those who prefer well-done steak.

Risk of high blood pressure: Often marinades for steaks contain a high amount of sugar and salt which can lead to health risks like high blood pressure and diabetes.

Increases inflammation: When the steak is grilled at high heat, it creates a by-product called advanced glycation end product (AGEs). As the food is grilled, the level of AGEs multiplies leading to increased inflammation.

Environment hazards: Grilling increases carbon footprints as the process involves the burning of charcoal. It also leaves residual ashes which further pollutes the environment. A live grill emits certain toxic fumes that can be harmful to the human body. Hence, it is better to grill food in open places or at least in a place that has good ventilation.

Ways to minimize grilling downsides

Food science is complex as we all know. With the research done to find the cons of grilling, food scientists have also conducted studies on minimizing their ill effects. Here are three popular ways.

1. Natural marinade: A marinade made from raw garlic and turmeric can reduce the formation of harmful chemicals in a grilled steak.

2. Natural antioxidants: Rosemary, onion, honey, etc. have natural anti-oxidant properties that can block harmful chemicals.

The key factors affecting your smoker temperature are wind, vent opening, the product you are smoking, and the temperature of the area where you have your smoker set up. 

The Bradley smoker is designed to deliver the best results low and slow. Cooking low and slow locks in moisture. The smoke delivers bold, distinct flavor. As a result, it comes with a modest, 500 watt heating element. The puck burner adds another 125 watts to the heat generation capability.  So, your sub 50 degree temperature is a challenge, when using your smoker as a cooker. 

Our new P10 has a new design with 1000W heat power, so it can deliver low and slow but also higher temperatures if desired.

Pro Tip: Most of us use our smokers as cookers, too. Nothing wrong with that. But if you have temperature challenges when it gets too cold that is no harm in adding smoke flavor first and finish cooking on an oven or grill.

Be Aware of the Wind

The biggest factor that causes your Bradley not to increase temperature is wind. It just seems to suck the heat right out of the smoker cabinet.  Sheltering the smoker from the wind helps. Some folks have made insulating covers for their smokers out of water heater insulating kits.  Others have installed their smoker in some kind of a smoker house to shelter it from the wind. Either a custom-built wood structure or one of those plastic snap-together sheds or storage bins. It also works as a guard for weather and safely storage in general.

Keep the Vent Wide Open

How wide open your vent is can also have a big impact on how easy it is for your smoker to get up to the temperature you want.  Some products, such as poultry, contain a lot of moisture.  If the vent isn’t wide open while you’re smoking a turkey, the moisture that the bird is releasing gets trapped in the smoker. 

Water can absorb a tremendous amount of heat, so the trapped moisture prevents the smoker from getting up to temp. Trapped moisture can also cause “black rain”.  The moisture condenses on the top of the smoker and drips down on the food you are smoking.  I understand “black rain” isn’t at all tasty, so you want to avoid it. 

The tip is to keep your vent wide open all the time.  Some, including me, have gone as far as removing the vent. The smoker works really well with a wide open vent. And removing it  prevents inadvertently leaving the vent closed when you start a smoke. 

Heating Elements May Help Heat Recovery

If you peruse the forums, you may see pictures of smokers with a silvery lump in the bottom right side of the smoker.  This is a foil-wrapped brick that acts as a heat sink.  The brick warms up as you preheat your smoker. Then, it releases that heat back to the smoker when you load cold meat or open the door. This causes the cabinet temperature to drop below the temperature of the brick. 

Smoking on a Windy Day

When I smoked a turkey breast on a cold (35 degree) windy day, I heated some of my smoking bricks in the oven. Then, I transferred them to the smoker when I put the breast into the smoker. It helped bring the smoker back up to temp faster and helped stabilize temperature fluctuations during the period where the turkey was absorbing a lot of heat. 

In conditions where it is difficult to use the smoker as a cooker, many folks will do their smoking, then transfer the product into the oven to complete the cooking part of the process. So this is How To Achieve High Temperatures On A Bradley Smoker.

Always Preheat Your Smoker

Pre-heating the smoker is key, we suggest one hour prior to starting the recipe. Give your smoker plenty of time to preheat. Do not expect constant temperatures above 250 degrees, as the normal operating temperature is 200 to 250 degrees. Allow additional time for your Bradley Smoker to regain peak heat after food is inserted. Some heat will escape throughout cooking, but keep the damper nearly closed and place the smoker out of the wind to retain consistent temperatures.

Check out your cable connections

Remember to push the cables all the way, and there is enough power getting to the heating element.

Also, make sure your power source is powerful enough for the smoker. For example, extension cords that are not powerful enough to use with the smokers can result in lower temperatures.

Time to start putting all of this together!

Opening the insulated door shows all of the space this unit has. We have the heating element as well as room for 6 cooking racks, the drip tray and everything else.

As you can see on the left hand side of the unit, we have the space for the digital smoke generator. Simply slide the digital smoke generator in to the side of the unit and rest on the hooks provided.

The Smoke Tower

It’s as easy as putting it straight in the hole on top of the digital smoke generator and then pushing it down firmly. Next up, plug the sensor cable in to the back of the digital smoke generator and in to the back of the unit. Follow that up with the short power cable to run from the digital smoke generator to the back of the unit. And most importantly the power cord to go straight from the back of the digital smoke generator to your power point.

Pro tip: when placing the bisquette tube on the smoke generator, never push it all the way to the end, leave a couple of inches space from the end, so the bisquette advancing system is never blocked.

Feed the Smoking Racks

Next up we feed the cooking racks on to each of the shelves provided. Depending on which model of Bradley smoker you have, you may either have 4 or 6 cooking racks. In the video’s case, he has the 6 rack digital smoker from Bradley. Just imagine everything you could cook in that!

Slide the drip tray in next, along with the rectangular tray to protect the base of the unit and lastly the drip bowl to catch the bisquettes and those delicious juices.

Bradley have kept set up of this unit very, very simple. Taking only 5-10 minutes to set up, you’ll be cooking in no time!

Clean Your Smoker Regularly!

Please remember to clean your Bradley smoker regularly. Grease and oil can build up inside of your smoker. You can easily clean it by using a water and vinegar solution. Do not use harsh chemicals as it can be harmful to your smoker.

Come on! Well, don’t fret, seasoning the smoker does not take long and within a few hours it will be ready for all your food smoking dreams!

The Bradley Smoker is a brand new product and the interior walls should be completely clean. Therefore, seasoning the smoker will coat the walls and interior of the smoker with a thin layer of smoke build up. This produces a contained smoke environment that will provide an enhanced smoke flavour to whatever you’re smoking.

Over time, the smoke buildup on the walls will increase. As a result, it will go from being shiny aluminum to a charred black coating. This is a welcome development as it not only shows that you are a veteran smoker, but then your meat will have a superior smoke flavour too!

  1. Make sure that you have finished putting the smoker together according to the manual.
  2. Fill the metal bowl with water and place it inside the smoker where the bisquettes fall off the burner.
  3. Put all the smoker racks in place inside the smoker.
  4. Set the top vent to half open.
  5. Place 8 wood bisquettes in the hopper. It really does not matter what flavor of wood you use.
  6. Turn on the smoker and set to a temperature of 250 F.
  7. Close the door and let the smoker go for 2 – 2 1/2 hours.
