Cheesy Smoked Pork and Sautéed Veggie Wrap Recipe


Smoked pork wrap

Another delicious way to use that smoked pork that has been in your fridge forever. Ready in 15 minutes, this is also an opportunity to add some veggies to your diet.

 

Prep Time: 15 minutes  Yield: Serves 4

Ingredients

2 Tbsp oil

1 Medium onion, thinly sliced

1 Sweet pepper (red, yellow or orange), cored and thinly sliced

8 Mushrooms, thinly sliced

1 Zucchini, thinly sliced

Salt and pepper, to taste

1 Cup grated cheese (mozzarella, provolone, etc.)

1 ½  Cups smoked pork tenderloin, sliced into thin strips

4 Large wraps

 

Directions

  1. Heat oil in a skillet on medium heat. 
  2. Add sliced onion, peppers, mushrooms, zucchini, salt and pepper to the skillet and sauté until the veggies are tender. Remove from heat.
  3. Preheat a panini press.
  4. Assemble the wraps by placing some smoked pork tenderloin, sautéed veggies and grated cheese in the middle of the wrap. Fold the wrap up so that it looks like a burrito. Place, folded side down, on the panini press. Lower the top grill plate and press gently. Grill the wrap until the sear marks show. The cheese should be melted and the insides hot.

Note: If you do not have a panini press, this can be served without grilling as it would resemble a fajita.
