Smoked pork tenderloin recipe

Tastes as good as it looks and it takes only 2 – 3 hours to get ready. While most traditional meats for smokers require at least 6 hours, pork tenderloin will be ready when internal temperature reaches 160 F. To make sure, always have an instant thermometer at hand.

1 pork tenderloin, silver skin and fat removed

Marinade:
4 cloves garlic, minced
2 tbsp Dijon mustard
½ cup maple syrup
1 tsp salt
½ tsp pepper
1 tbsp vegetable oil

2. Place tenderloin and marinade ingredients in a freezer bag, and allow to marinate overnight in the fridge
3. Remove tenderloin from marinade
4. Smoke for 2.5 – 3 hours in preheated smoker at 225°F with maple bisquettes. Remove from smoker once an internal temperature of 160°F is reached
