Smoked Chicken Lollipops


Chicken lollipops are simply chicken drumsticks that were trimmed at the bone joint and pushed down to form a handle with the bone and the meat in the point to form a lollipop.

Ingredients:

Ground Black Pepper

Salt

Cumin

Garlic Powder

Smoked Paprika

Coriander 

Preparation

Using a sharp knife, cut through the bone right below the joint and simply push the skin and meat down from the bone so the bone is exposed. Now with the bone exposed wrap it in foil to protect it from burning or turning dark.

Now season the chicken on all sides with your preferred rub. Here we suggest using equal parts of ground black pepper, salt, cumin, garlic Powder, smoked Paprika and coriander, mix all together in a shaker and apply on the chicken. Finish it wrapping it in Bacon and to the smoker it goes. (Toothpick to secure the bacon can help here)

 Set the Bradley Smoker at 225F (107C) degrees using hickory bisquettes until it reaches 165 ºF (74C).
