Mac and cheese is probably one of the most popular comfort food dishes. Think about those rainy days that soon will be knocking on our door. Then, all that you are craving for is something tasty that will get rid of that comfort food craving right away. Now, let’s give the traditional Mac and cheese a spin; Mac and smoked cheese. And it super easy to make! We will help you find ways to keep on using your Bradley Smoker all Winter long!
Ingredients
- Medium sized wheel or wedge of Gouda (enough for more than 2 cups shredded)
- 8 oz raw macaroni noodles
- 3 cups milk
- ¼ cup butter + 1 tbsp
- 2 tbsp flour
- 1 tbsp nutmeg
- Salt & pepper
Directions
- Cold smoke gouda for 1-2 hours with Bradley Apple bisquettes
- Cook macaroni until al dente in salted water, then drain
- Melt ¼ cup butter in a medium sized sauce pan
- Add flour to form a roux over medium heat, stirring constantly
- Stir in milk with a whisk
- Reduce heat to low and add 2 cups of shredded smoked gouda and nutmeg
- Add cooked macaroni and stir until all noodles are coated with sauce
- Season with salt and pepper
- Add remaining tablespoon of butter to finish
- Serve with extra shredded smoked gouda on top
