Smoked Sausage and Beer Chili Recipe


Smoked sausage and beer chili

This chili recipe uses smoked sausage instead of the traditional ground beef base.

Ingredients

• 1 tbsp oil
• 1 1/2 cup diced onion
• 1 1/2 cup diced celery
• 1 1/2 cup diced red pepper
• 2 pounds smoked sausage, sliced into 1/2 in slices (see recipe for Smoking Store-bought Sausage)
• 2 garlic cloves, minced
• one 28 oz can diced tomatoes
• 2 cans kidney beans, rinsed and drained
• 1 can black beans, rinsed and drained
• 1 bottle beer
• 3 tbsp tomato paste
• 3 tbsp chill powder
• 2 tbsp brown sugar
• 1 tsp salt
• 1/2 tsp cayenne pepper

Directions

1. Heat oil on medium heat, in a dutch oven or large pot.
2. Add onion, celery, pepper and garlic to the dutch oven and fry, stirring often, until the vegetables are tender.
3. Add sliced smoked sausage and cook stirring often for about 5-7 minutes.
4. Stir in the remaining ingredients and bring to a boil.
5. Lower heat, stir and cover with lid.
6. Let the chill simmer for 90 minutes.
7. Serve hot.
